Form new products at benchtop scale using novel ingredient technologies for plant-based food, alternative proteins & better-for-you food; identify & source appropriate ingredients adhering to required nutritional & regulatory requirements; develop nutritional fact panels using Esha Genesis software; conduct necessary sensory testing to validate product acceptability; conduct shelf-life assessments & identify critical control points for product acceptability with respect to microbiological, analytical sensory properties; keep a thorough & detailed technical record of all scientific experimentation including establishing equipment & process SOPs& managing multiple projects & present data to stakeholders in a clear & concise manner.
Requirements:
Bachelor's degree or foreign equivalent in Food Science, or related + 6 months experience in formulating, developing & improving plant-based food & alternative proteins from benchtop to production scale. Experience must include: operating food process technology & equipment including Thermomix; nutritional labeling software (Esha Genesis); analytical equipment (texture analyzer, viscometer, moisture analyzer, pH meter & water activity meter) & food development skills including flavor development & optimization, ingredient chemistry, ingredient sourcing & food design.
